Culinary Genius: Brownie Cookie Explosion

The holiday season is traditionally a time for undertaking the preparation of many many many baked goods. It is the time of food, and affection through culinary prowess. My mother is a trained pastry chef, so she spends a lot of time in the kitchen. As a matter of fact, it is hard to pry her away from the stove for longer than a few hours. As a result, Christmas really sends the house into overdrive.

A few days after I got home, I managed to pull her away from the kitchen long enough to make something I shall deem the Brownie Cookie Explosion. It's something I'd seen a few times of Pinterest, and thought it would be worth trying. Unfortunately, my camera malfunctioned, and all the pictures were lost, so you'll just have to work with me.

The Brownie Cookie Explosion is:
A layer of chocolate chip cookie dough, covered in a layer of Oreos, covered in brownie batter, and baked.

Oh wow.

It's a delicious as it sounds. I thought I'd share the recipe with you, and perhaps you'll find it just as delicious.

Brownie Cookie Explosion

First, line your pan with parchment or cooking spray, but preferably both. We used a 9x13 pan, but found that the resulting brownie was very very very thick. As a result, I would use one slightly bigger, if you have it.

In a bowl, or in a stand mixer if you have one, combine:
1 cup butter
1 cup sugar
3/4 cup brown sugar
2 eggs
1 Tablespoon vanilla extract
2 1/2 cups flour
1 teaspoon baking soda
1 teaspoon salt
2 cups (or a lot) chocolate chips

This is pretty much just my mom's favourite cookie recipe. Smear it into a layer in the bottom of the pan. It's easiest if you use your fingers or the back of a large spoon.

After this, layer your Oreos in neat rows on top of the cookie dough layer.

Then, mix up some brownie batter. We cheated, and used a mix. If you have a homemade brownie recipe you like, use that. Then, pour the batter over the cookies and oreos already in the pan.

Shove the whole thing into the oven at 350 degrees until the brownie layer on top is done. Ours took about an hour, but my friend clocked hers at 45 minutes.

Then you're done! Cut and enjoy!

If you're feeling healthy, you can use doublestuffed or chocolate dipped oreos.
If you're feeling really healthy, you can top with ice cream. It's delicious!
