Last Day Off, and Some Baking!
Today is my last day of unemployment for a little while,
hopefully. I start working tomorrow, which I can’t even describe how excited I
am for that. I’m only part time for a few weeks, but I’m going to be pushing
every minute for fulltime, and if I can’t, I’ve been looking at some casual
jobs on the side.
My sister still lives at home, so my parents aren’t exactly
experiencing empty-nest, but they have been reacting very interestingly to me
finally having my own place. Mom keeps sending me recipes for breads and
cookies and cakes that are made out of little more than flour, water, dust, and
housewife-y magic. Dad’s been emailing me tips from financial journals with titles
like “Living on $4 a year” (that’s an exaggeration, but not much of one). Today
I made some muffins using one of Ma’s recipes, which I’ll add below. They’re
not bad, but they could use a little improvement. They bake up moist and
fluffy, and not too sweet. However, they are a little bland. I would add a
teaspoon of cinnamon, or some raisins or chocolate chips.

Makes 6 muffins
1/2 cup milk
1/2 cup oats…I used whatever I had, which was
Quaker Quick Oats (the 1 minute kind)
1 egg
2 tbsp vegetable oil
1/2 cup all-purpose flour
2 tbsp sugar
1 tsp baking powder
Dash of salt
Combine
all the ingrediants in a mixing bowl, and spoon into prepared muffin cups until
each is 2/3 full. Bake for 20 minutes (or so) at 425 degrees. Let cool and
enjoy :)
