Chewy Cocoa Cookies!


My roommate, B, is a picky eater, so it’s not often that we can both agree on what is delicious. Let’s just say that I have somewhat refined tastes, compared to her steady diet of plain bagels and Kraft dinner. Last night, however, I got home from work, and wanted to bake. I wanted to bake a lot. So I got to the stove and whipped up some delicious cocoa cookies! B came home and simply adored them! So here you have my super delicious recipe for super delicious Chewy Cocoa Cookies!


 
1 1/2 cups flour
1/2 cup cocoa powder
1 teaspoon baking powder
1/2 teaspoon salt
1 cup butter or margarine (It comes out fine with either, I promise!)
1 1/2 cups sugar
1 egg

Cream the butter and sugar together, and add the egg. Beat until fluffy. We don’t have a mixer, but a good wooden spoon and some elbow grease works. Add the flour, cocoa, baking powder, and salt, and mix until fully incorporated. It will be a bit stiff, and shouldn’t be too sticky. If it is sticky, refrigerate for a couple hours before rolling. Roll into ½ inch balls and bake at 375o for about 10 minutes, or until the tops start to crack. You want them to still be a bit pliable after they’ve cooled, so don’t bake much past the cracking point. They taste great warm, and also cooled. Enjoy :)
