Chocolate and Marzipan Scone Loaf

It’s spring time, and I’m always looking for some cute little cakes and loaves that will work to take into work, or to Easter, or other parties and events. This one has been a tried-and-true favorite both at my work and has been incredibly reliable for just about anything! We’ve been making a lot of recipes from Molly Yeh’s Molly on the Range cookbook, we made her super awesome Scone Loaf. Unfortunately, I found it to be kind of heavy. This is my adapted, lightened version.

  • 8 oz marzipan

  • 1 tbsp powdered sugar

  • ½ cup chocolate chips

  • ¾ cup all purpose flour

  • 1 ¼ cup whole wheat flour

  • 1 tbsp baking powder

  • ½ tsp salt

  • 2 tbsp sugar

  • ¾ cup butter

  • 2 eggs

  • 1/3 cup milk

  • 1 tbsp greek yogurt

Preheat oven to 375. Grease up a loaf pan. Chop up the butter into quarter-inch bits. Do the same thing to the marizipan. 8 ounces is a LOT of marzipan, so if you want to use less, that’s fine. Then, toss the chocolate chips and the marzipan in the powdered sugar. In a separate bowl, blend dry ingrediants. Add butter and cream until well blended, then add milk, yogurt, and eggs. Add in the chocolate chips and marzipan. Pour into your loaf pan and cook for around 40 minutes, until a knife comes out clean.
